What is known as Austrian cuisine is a heritage of the Austrian-Hungarian monarchy. Of course, it is closely related with the culinary tradition in Bavaria, but with strong influences from the former provinces — Hungary and, through many cooks working in Viennese households, Bohemia in the east, and, mainly in the southern and western parts, Italy.
